Ingredients
- 1 lb scallops
- 2 cups bread crumbs
- 2 eggs, beaten
- 1/2 cup all-purpose flour
- 1/4 cup vegetable oil
- Salt and pepper to taste
Directions
- Rinse the scallops and pat dry.
- In a shallow dish, combine the bread crumbs, salt and pepper.
- In another shallow dish, place the beaten eggs.
- Place the flour in a third shallow dish.
- Dip each scallop in the flour, then in the eggs, and finally in the bread crumbs.
- Heat the oil in a large skillet over medium-high heat.
- Fry the scallops in the hot oil for 3-4 minutes, until golden brown and crispy.
- Remove the scallops from the skillet and drain on a paper towel-lined plate.
- Serve hot.
