Ingredients

  • 1 lb scallops
  • 2 cups bread crumbs
  • 2 eggs, beaten
  • 1/2 cup all-purpose flour
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Directions

  1. Rinse the scallops and pat dry.
  2. In a shallow dish, combine the bread crumbs, salt and pepper.
  3. In another shallow dish, place the beaten eggs.
  4. Place the flour in a third shallow dish.
  5. Dip each scallop in the flour, then in the eggs, and finally in the bread crumbs.
  6. Heat the oil in a large skillet over medium-high heat.
  7. Fry the scallops in the hot oil for 3-4 minutes, until golden brown and crispy.
  8. Remove the scallops from the skillet and drain on a paper towel-lined plate.
  9. Serve hot.
