Ingredients

  • 2 pounds Yukon Gold potatoes, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste

Directions

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, combine potatoes, olive oil, garlic powder, onion powder, oregano, thyme, salt and pepper. Toss to coat.
  3. Transfer the potatoes to a large baking sheet and spread into a single layer.
  4. Bake for 25-30 minutes, flipping potatoes halfway through, until golden brown and crispy.
