Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup diced red onion
  • 2 large tomatoes, diced
  • 1/2 cup diced cucumber
  • 1/2 cup diced red bell pepper
  • 1/4 cup sliced black olives
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons red wine vinegar
  • Salt and freshly ground black pepper, to taste

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the garlic, oregano, and red pepper flakes and cook until fragrant, about 1 minute.
  3. Add the red onion and cook until softened, about 3 minutes.
  4. Add the tomatoes, cucumber, bell pepper, and black olives and cook until the vegetables are tender, about 5 minutes.
  5. Add the feta cheese and red wine vinegar and stir to combine.
  6. Season with salt and pepper, to taste.
  7. Serve warm.
