Directions
- Heat the olive oil in a large skillet over medium heat.
- Add the garlic, oregano, and red pepper flakes and cook until fragrant, about 1 minute.
- Add the red onion and cook until softened, about 3 minutes.
- Add the tomatoes, cucumber, bell pepper, and black olives and cook until the vegetables are tender, about 5 minutes.
- Add the feta cheese and red wine vinegar and stir to combine.
- Season with salt and pepper, to taste.
