Ingredients

  • 1 pound of jumbo shrimp (deveined and peeled)
  • 1 cup of walnuts
  • 2 tablespoons of cornstarch
  • 1/2 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 2 tablespoons of vegetable oil
  • 2 tablespoons of honey
  • 1 tablespoon of soy sauce
  • 1 garlic clove, minced

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Spread the walnuts on a baking sheet and bake for 10 minutes, or until golden brown. Allow to cool and set aside.
  3. In a medium bowl, mix together the cornstarch, baking powder, salt and pepper. Add the shrimp and mix until the shrimp is well coated.
  4. In a large skillet over medium heat, heat the oil. Once the oil is hot, add the shrimp and cook until golden brown, about 3 minutes per side. Remove the shrimp from the skillet and set aside.
  5. In the same skillet, add the honey, soy sauce and garlic. Cook for 1 minute, stirring constantly.
  6. Add the walnuts and shrimp to the skillet and stir to coat the shrimp with the sauce. Cook for an additional 2 minutes.
  7. Serve hot.
