Ingredients

  • 1 pound ground pork
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon red pepper flakes
  • 2 zucchinis, diced
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh parsley

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the ground pork and cook, stirring occasionally, until browned, about 5 minutes.
  3. Add the onion, garlic, bell peppers, oregano, cumin, paprika, salt, black pepper, cayenne pepper, and red pepper flakes. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  4. Add the zucchini and chicken broth. Cook, stirring occasionally, until the zucchini is tender, about 5 minutes.
  5. Stir in the parsley and season to taste with additional salt, black pepper, and/or red pepper flakes, if desired.
  6. Serve hot.
