Heat the olive oil in a large skillet over medium-high heat.
Add the ground pork and cook, stirring occasionally, until browned, about 5 minutes.
Add the onion, garlic, bell peppers, oregano, cumin, paprika, salt, black pepper, cayenne pepper, and red pepper flakes. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
Add the zucchini and chicken broth. Cook, stirring occasionally, until the zucchini is tender, about 5 minutes.
Stir in the parsley and season to taste with additional salt, black pepper, and/or red pepper flakes, if desired.
Serve hot.
