Ingredients

  • 1 tablespoon vegetable oil
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper (any color)
  • 1 cup broccoli florets
  • 1 cup sliced mushrooms
  • 1 clove garlic, minced
  • 1 teaspoon freshly grated ginger
  • 3 tablespoons soy sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1/2 teaspoon sugar
  • 1/2 pound boneless, skinless chicken breast, cut into bite-sized pieces

Directions

  1. Heat oil in a wok or large skillet over medium-high heat.
  2. Add onion, bell pepper, broccoli, mushrooms, garlic, and ginger, and stir-fry for 2-3 minutes, until vegetables are crisp-tender.
  3. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, and sugar.
