Ingredients

  • 2 pounds red potatoes, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons freshly chopped parsley
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/4 cup freshly chopped chives
  • 2 tablespoons freshly squeezed lemon juice

Directions

  1. Preheat oven to 400 degrees F.
  2. In a large bowl, combine potatoes, olive oil, garlic powder, oregano, basil, onion powder, salt, and pepper. Toss to coat.
  3. Spread potatoes in a single layer on a baking sheet. Roast for 25 minutes, stirring once halfway through.
  4. Remove from oven and let cool for 10 minutes.
  5. In a large bowl, combine parsley, mayonnaise, Dijon mustard, chives, and lemon juice. Add potatoes and gently stir until combined.
  6. Serve chilled or at room temperature.
