Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons soy sauce
  • 2 tablespoons honey

  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 medium carrot, sliced
  • 1 cup snow peas
  • 2 green onions, sliced
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Directions

  1. In a small bowl, whisk together the soy sauce, honey, grated ginger, and minced garlic.
  2. Place the shrimp in a separate bowl and pour half of the marinade over them. Let them marinate for at least 10 minutes.
  3. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  4. Add the bell pepper, carrot, and snow peas to the skillet. Stir-fry for 2-3 minutes, until they are slightly tender but still crisp.
  5. Remove the vegetables from the skillet and set them aside.
  6. Add the marinated shrimp to the skillet and cook for 2-3 minutes per side, until they are pink and cooked through.
  7. Return the vegetables to the skillet and pour in the remaining marinade. Stir-fry for an additional 1-2 minutes, until everything is heated through and coated in the sauce.
  8. Season with salt and pepper to taste.
  9. Serve the honey ginger shrimp and vegetables over cooked rice. Garnish with sliced green onions.
