Ingredients
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup whole milk
- 1/2 cup vegetable shortening
- 1/2 cup confectioners’ sugar
Directions
- Preheat oven to 350°F. Grease and flour 12-count Twinkie pan.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs, one at a time, beating well after each addition.
- Beat in the vanilla and almond extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Alternately add the flour mixture and the milk to the butter mixture, beating well after each addition.
- Pour the batter into the prepared pan.
- Bake for 18 to 20 minutes, or until a toothpick inserted into the center of a cake comes out clean.
- Cool in the pan for 10 minutes, then carefully turn out onto a wire rack to cool completely.
- In a medium bowl, cream together the shortening and confectioners’ sugar until light and fluffy.
- Spread the filling into the cooled cakes.
