Ingredients

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup whole milk
  • 1/2 cup vegetable shortening
  • 1/2 cup confectioners’ sugar

Directions

  1. Preheat oven to 350°F. Grease and flour 12-count Twinkie pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, beating well after each addition.
  4. Beat in the vanilla and almond extract.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Alternately add the flour mixture and the milk to the butter mixture, beating well after each addition.
  7. Pour the batter into the prepared pan.
  8. Bake for 18 to 20 minutes, or until a toothpick inserted into the center of a cake comes out clean.
  9. Cool in the pan for 10 minutes, then carefully turn out onto a wire rack to cool completely.
  10. In a medium bowl, cream together the shortening and confectioners’ sugar until light and fluffy.
  11. Spread the filling into the cooled cakes.
