This homemade toasted quinoa granola is a healthier alternative to traditional granola, packed with fiber, protein, and antioxidants. It's easy to make and perfect for breakfast or snacking on the go.

Ingredients

  • 1 cup uncooked quinoa
  • 1/2 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup chopped nuts (almonds, pecans, or walnuts)
  • 1/4 cup dried fruit (raisins, cranberries, or chopped apricots)

Directions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Rinse quinoa under running water to remove bitterness, then spread it out on the baking sheet.
  3. Toast quinoa in the oven for 10-15 minutes, until lightly golden and fragrant.
  4. In a large bowl, mix toasted quinoa, oats, honey/maple syrup, coconut oil, cinnamon, and salt.
  5. Spread the mixture back onto the baking sheet and bake for another 20-25 minutes, stirring occasionally.
