Ingredients
- 12 apples (a mix of sweet and tart varieties)
- 1 orange
- 1 lemon
- 4 cinnamon sticks
- 1 teaspoon whole cloves
- 1/2 teaspoon ground nutmeg
- 1/2 cup brown sugar
- 8 cups water
Directions
- Wash and quarter the apples, making sure to remove the cores.
- Cut the orange and lemon into slices.
- In a large pot, add the quartered apples, orange slices, lemon slices, cinnamon sticks, cloves, nutmeg, and brown sugar.
- Pour the water into the pot and bring the mixture to a boil over medium-high heat.
- Once boiling, reduce the heat and let the cider simmer for about 45 minutes, or until the apples are soft and mushy.
- Remove the pot from heat and let it cool slightly.
- Using a potato masher or a spoon, mash the softened apples in the pot to release more juice and flavor.
- Place a fine-mesh strainer or cheesecloth over a large bowl or pitcher.
- Slowly pour the cider mixture into the strainer, allowing the liquid to separate from the pulp and spices.
- Press down on the solids in the strainer to extract as much juice as possible.
- Discard the solids and spices left in the strainer.
- Serve the warm cider in mugs, garnished with a cinnamon stick or a slice of orange, if desired.
- Enjoy the homemade Smitty's Apple Cider!
