  • 1/2 cup dried fruits (such as cranberries, raisins, or apricots), chopped
  • 1/4 cup honey
  • 1/4 cup melted coconut oil
  • 1/4 cup almond butter
  • 1/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Directions

  1. Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, nuts, seeds, and dried fruits.
  3. In a small saucepan, heat the honey, melted coconut oil, almond butter, brown sugar, vanilla extract, ground cinnamon, ground nutmeg, and salt over low heat. Stir until well combined and the mixture is smooth.
  4. Pour the honey mixture over the dry ingredients and mix well until everything is coated evenly.
  5. Transfer the mixture to the prepared baking dish and press it down firmly using the back of a spoon or your hands.
  6. Bake in the preheated oven for 15-20 minutes or until the edges turn golden brown.
  7. Remove from the oven and let it cool completely in the baking dish before cutting into bars.
