Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 cup unsalted butter, chilled and cubed

  • 1/2 cup cream cheese, room temperature
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 1/2 tsp salt

Directions

  1. In a large bowl, combine the flour and powdered sugar. Cut in the butter until the mixture resembles coarse crumbs.
  2. Add the vanilla extract and mix until the dough comes together.
  3. Divide the dough in half and shape into two disks. Wrap in plastic wrap and refrigerate for at least 1 hour.
  4. In a separate bowl, cream together the cream cheese and granulated sugar until smooth. Mix in the egg yolk and salt.
  5. Roll out each disk of dough on a floured surface to 1/8 inch thickness. Cut out circles using a cookie cutter.
  6. Place a spoonful of the cream cheese mixture in the center of half of the circles. Top with the remaining circles and press the edges to seal.
  7. Bake at 350°F for 12-15 minutes, or until lightly golden brown. Let cool before serving.
