Ingredients

  • 3 ounces fresh ginger, peeled and finely grated
  • 1/2 cup sugar
  • 6 cups of water
  • 1/2 teaspoon active dry yeast
  • 1/2 teaspoon baking soda

Directions

  1. In a medium pot, combine the ginger and sugar with 1 cup of water and bring to a boil. Reduce the heat and simmer for 15 minutes, stirring occasionally.
  2. Remove from heat and strain the mixture through a fine sieve or cheesecloth. Discard the solids.
  3. Transfer the liquid to a large bowl or pitcher and stir in the remaining 5 cups of water.
  4. Sprinkle the yeast and baking soda over the top of the liquid and stir until both are dissolved.
  5. Cover the bowl or pitcher and let it sit in a warm spot for 12 to 24 hours.
  6. Strain the liquid through a fine mesh strainer lined with cheesecloth and pour it into a bottle or jar. Seal tightly.
  7. Keep refrigerated and enjoy!
