Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 (15 ounce) can diced tomatoes, with juice
  • 1/2 cup water
  • Salt and pepper to taste

Directions

  1. Heat the oil in a large saucepan over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
  2. Add the spices and cook for another 1-2 minutes, stirring constantly.
  3. Add the tomatoes and juice, water, salt, and pepper. Stir to combine.
  4. Bring the mixture to a simmer and cook for 15-20 minutes, stirring occasionally, until the sauce has thickened.
  5. Remove from the heat and let cool. Serve with your favorite dishes.
