Ingredients

  • 1 lb. chicken thighs, cut into thin strips
  • 2 tablespoons olive oil
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cardamom
  • 2 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1/4 cup brown sugar
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup chopped peanuts
  • 1/4 cup chopped green onions
  • 2 cups cooked jasmine rice
  • 4 large burrito-style flour tortillas

Directions

  1. In a large bowl, combine the chicken strips, olive oil, ginger, cumin, chili powder, garlic powder, coriander, cardamom, fish sauce, soy sauce, lime juice, and brown sugar. Mix until the chicken is evenly coated.
  2. Heat a large skillet over medium-high heat. Add the chicken and cook for about 10 minutes, stirring occasionally, until the chicken is cooked through and the sauce is thick and glossy.
  3. Stir in the cilantro, peanuts, and green onions.
  4. Warm the tortillas in the microwave for 30 seconds.
  5. Spread 1/2 cup of cooked jasmine rice onto each tortilla. Top with the chicken mixture and wrap up into burrito-style wraps.
  6. Serve warm.
