Ingredients

  • 4 large eggs
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1/2 teaspoon salt
  • 1 1/2 cups cake flour
  • 1 teaspoon baking powder
  • 1/4 cup heavy cream
  • 1/2 cup confectioners' sugar
  • 1/2 teaspoon pure vanilla extract
  • 1 cup heavy cream, whipped

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch round cake pan.
  2. In a large bowl, beat eggs, granulated sugar, oil, 2 teaspoons vanilla extract, and salt until light and fluffy. Sift in cake flour and baking powder, and mix until just combined.
  3. Pour batter into prepared pan and bake in preheated oven for 25 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  4. In a medium bowl, beat 1/4 cup cream, confectioners' sugar, and 1/2 teaspoon vanilla extract until thick and creamy.
  5. Spread cream filling over cooled cake and top with whipped cream.
