Ingredients

  • 1 lb of white fish (cod, haddock, tilapia)
  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 teaspoon of red pepper flakes
  • 1 teaspoon of ground cumin
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of oregano
  • 1 teaspoon of thyme
  • 1 cup of diced tomatoes
  • 2 cups of vegetable broth
  • 1/2 cup of white wine
  • 1 bay leaf
  • Salt and pepper, to taste
  • 2 tablespoons of chopped fresh parsley

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, and bell pepper and sauté for 5 minutes, or until the vegetables are softened.
  3. Add the red pepper flakes, cumin, paprika, oregano, and thyme and stir to combine.
  4. Add the diced tomatoes and cook for 2 minutes.
  5. Add the vegetable broth, white wine, and bay leaf and bring to a boil.
  6. Reduce the heat to low and simmer for 15 minutes.
  7. Add the fish to the soup and simmer for 5 minutes, or until the fish is cooked through.
  8. Season with salt and pepper, to taste.
  9. Garnish with fresh parsley and serve.
