Ingredients
- 1 lb of white fish (cod, haddock, tilapia)
- 2 tablespoons of olive oil
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon of red pepper flakes
- 1 teaspoon of ground cumin
- 1 teaspoon of smoked paprika
- 1 teaspoon of oregano
- 1 teaspoon of thyme
- 1 cup of diced tomatoes
- 2 cups of vegetable broth
- 1/2 cup of white wine
- 1 bay leaf
- Salt and pepper, to taste
- 2 tablespoons of chopped fresh parsley
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, and bell pepper and sauté for 5 minutes, or until the vegetables are softened.
- Add the red pepper flakes, cumin, paprika, oregano, and thyme and stir to combine.
- Add the diced tomatoes and cook for 2 minutes.
- Add the vegetable broth, white wine, and bay leaf and bring to a boil.
- Reduce the heat to low and simmer for 15 minutes.
- Add the fish to the soup and simmer for 5 minutes, or until the fish is cooked through.
- Season with salt and pepper, to taste.
- Garnish with fresh parsley and serve.
