Made with fresh apricots, a flaky pie crust, and a touch of cinnamon, this pie is the perfect dessert for any occasion. The sweet and tart flavors of the apricots combined with the buttery crust create a mouthwatering treat that will have everyone asking for seconds. With a preparation time of just 30 minutes, you can whip up this pie in no time and impress your family and friends with your baking skills.

Ingredients

  • 4 cups fresh apricots, pitted and sliced
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, cut into small pieces
  • 1 package refrigerated pie crusts

Directions

  1. Preheat the oven to 425 degrees Fahrenheit (220 degrees Celsius).
  2. In a large mixing bowl, combine the apricots, sugar, flour, cinnamon, and salt. Toss until the apricots are coated evenly.
  3. Place one pie crust into a 9-inch pie dish. Trim any excess crust hanging over the edge.
  4. Pour the apricot filling into the pie crust, spreading it out evenly.
  5. Dot the top of the filling with the pieces of butter.
  6. Cover the pie with the second pie crust. Seal the edges by pressing the top and bottom crusts together with your fingers. You can also crimp the edges for a decorative touch.
  7. Make several slits on the top crust to allow steam to escape during baking.
  8. Place the pie on a baking sheet to catch any drips and prevent your oven from getting messy. Bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
  9. Remove the pie from the oven and let it cool on a wire rack for at least 2 hours before serving to allow the filling to set.
  10. Serve the apricot pie warm or at room temperature. Enjoy!
