  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro, for garnish

  1. Preheat the oven to 375°F (190°C).
  2. In a large oven-safe skillet or casserole dish, heat the olive oil over medium heat.
  3. Add the diced onion and bell pepper, and sauté until they become soft and translucent, about 5 minutes.
  4. Stir in the minced garlic and cook for an additional minute.
  5. Add the rice to the skillet and stir to coat it with the oil and vegetables.

  8. Stir everything together until well combined.
  9. Bring the mixture to a boil, then reduce the heat to low, cover the skillet, and let it simmer for 20 minutes or until the rice is tender and the liquid is absorbed.
  10. Remove from heat and sprinkle the shredded cheddar cheese on top.
