- 1 cup long-grain white rice
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes, undrained

- 1 cup frozen peas
- 1 can black beans, drained and rinsed
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon chili powder

- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro, for garnish

- Preheat the oven to 375°F (190°C).
- In a large oven-safe skillet or casserole dish, heat the olive oil over medium heat.
- Add the diced onion and bell pepper, and sauté until they become soft and translucent, about 5 minutes.

- Add the frozen corn, peas, black beans, and all the spices – cumin, paprika, chili powder, salt, and black pepper.
