Ingredients

  • 6 strips of bacon, chopped
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 2 bell peppers, diced
  • 2 cups of frozen hash browns
  • 1 teaspoon of paprika
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 6 eggs
  • 1/4 cup of shredded cheddar cheese
  • 2 tablespoons of chopped parsley

Directions

  1. In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon grease in the pan.
  2. Add the diced onion and minced garlic to the skillet with the bacon grease. Sauté until the onion becomes translucent.
  3. Add the diced bell peppers to the skillet and cook until they start to soften.
  4. Stir in the frozen hash browns, paprika, salt, and black pepper. Cook for 5-7 minutes, or until the hash browns are browned and crispy.
  5. Make 6 wells in the hash brown mixture and crack an egg into each well. Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your desired level of doneness.
  6. Sprinkle the shredded cheddar cheese and chopped parsley over the eggs and hash browns. Cover the skillet again and cook for an additional 2 minutes, or until the cheese is melted.
  7. Remove the skillet from the heat and let it cool slightly before serving. Garnish with additional parsley, if desired.
