Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried thyme
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups beef broth
  • 1 can diced tomatoes
  • 1 cup pasta of your choice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Directions

  1. In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, milk, chopped parsley, salt, pepper, garlic powder, dried oregano, dried basil, and dried thyme. Mix well until all the ingredients are evenly incorporated.
  2. Shape the mixture into small meatballs, about 1 inch in diameter.
  3. Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, sliced carrots, sliced celery, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
  4. Add the beef broth and diced tomatoes to the pot. Bring the mixture to a boil.
  5. Carefully drop the meatballs into the boiling soup. Reduce the heat to low and let the soup simmer for about 20 minutes, or until the meatballs are cooked through.
  6. Meanwhile, cook the pasta in a separate pot according to the package instructions. Drain the cooked pasta and set aside.
  7. Once the meatballs are cooked, add the cooked pasta to the soup and stir gently to combine. Season with salt and pepper to taste.
