Ingredients

  • 2 pounds beef stew meat, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 3 tablespoons sweet paprika
  • 1 teaspoon caraway seeds
  • 1 teaspoon dried marjoram
  • 1 teaspoon dried thyme
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 2 cups water
  • 2 medium potatoes, peeled and diced
  • 2 carrots, peeled and diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • Salt and pepper, to taste
  • Sour cream and chopped parsley, for garnish

Directions

  1. In a large pot, heat the vegetable oil over medium heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.
  2. In the same pot, add the diced onion and minced garlic. Cook until the onion is soft and translucent.
  3. Stir in the sweet paprika, caraway seeds, dried marjoram, and dried thyme. Cook for a minute to toast the spices.
  4. Add the tomato paste and cook for another minute, stirring constantly.
  5. Return the browned beef stew meat to the pot and pour in the beef broth and water. Bring the mixture to a boil.
  6. Reduce the heat to low and let the soup simmer, covered, for 1 hour.
  7. After 1 hour, add the diced potatoes, carrots, and diced bell peppers to the pot. Simmer for another 30 minutes, or until the vegetables are tender.
  8. Season the soup with salt and pepper to taste.
  9. Serve the goulash soup hot, garnished with a dollop of sour cream and a sprinkle of chopped parsley.
