Ingredients
- 2 pounds beef stew meat, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 1 large onion, diced
- 3 garlic cloves, minced
- 3 tablespoons sweet paprika
- 1 teaspoon caraway seeds
- 1 teaspoon dried marjoram
- 1 teaspoon dried thyme
- 2 tablespoons tomato paste
- 4 cups beef broth
- 2 cups water
- 2 medium potatoes, peeled and diced
- 2 carrots, peeled and diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- Salt and pepper, to taste
- Sour cream and chopped parsley, for garnish
Directions
- In a large pot, heat the vegetable oil over medium heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.
- In the same pot, add the diced onion and minced garlic. Cook until the onion is soft and translucent.
- Stir in the sweet paprika, caraway seeds, dried marjoram, and dried thyme. Cook for a minute to toast the spices.
- Add the tomato paste and cook for another minute, stirring constantly.
- Return the browned beef stew meat to the pot and pour in the beef broth and water. Bring the mixture to a boil.
- Reduce the heat to low and let the soup simmer, covered, for 1 hour.
- After 1 hour, add the diced potatoes, carrots, and diced bell peppers to the pot. Simmer for another 30 minutes, or until the vegetables are tender.
- Season the soup with salt and pepper to taste.
