Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 sweet potatoes, peeled and diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups kale, chopped
  • Salt and pepper to taste
  • Optional: red pepper flakes for heat

Directions

  1. In a large pot, heat some olive oil over medium heat. Add the onion and garlic, and sauté until fragrant.
