Ingredients

  • 4 beef shanks, 2 inches thick
  • Salt and pepper to taste
  • 1/2 cup flour
  • 3 tbsp olive oil
  • 1 onion, finely chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cloves of garlic, minced
  • 1 cup red wine
  • 1 can (14 oz) diced tomatoes
  • 2 cups beef broth
  • 2 bay leaves
  • 1 sprig of rosemary
  • 1 sprig of thyme
  • Gremolata (optional): 1/4 cup chopped parsley, 1 tbsp lemon zest, 1 clove of garlic, minced

Directions

  1. Preheat oven to 350°F.
  2. Season beef shanks with salt and pepper, then dredge in flour.
  3. In a large Dutch oven, heat olive oil over medium-high heat.
  4. Brown beef shanks on all sides, about 3 minutes per side. Remove from pot and set aside.
  5. Add onion, carrots, celery, and garlic to the pot. Cook until softened, about 5 minutes.
  6. Deglaze the pot with red wine, scraping up any brown bits from the bottom.
  7. Stir in diced tomatoes, beef broth, bay leaves, rosemary, and thyme.
