Ingredients
- 2 pounds beef stew meat, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 carrots, peeled and sliced
- 4 celery stalks, sliced
- 2 potatoes, peeled and diced
- 1 cup frozen peas
- 4 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Directions
- In a large pot, heat olive oil over medium heat. Add the beef stew meat and brown on all sides. Remove the meat and set aside.
- In the same pot, add the onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
- Return the beef to the pot and add the potatoes, peas, beef broth, red wine, tomato paste, thyme, rosemary, salt, and pepper. Bring to a simmer.
- Cover and cook for 1.5-2 hours, stirring occasionally, until the meat is tender and the flavors have melded together.
