Ingredients
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 6 cups beef broth
- 1 can kidney beans, drained and rinsed
- 1 cup small pasta (such as ditalini or small shells)
- 2 cups chopped spinach
- Salt and pepper to taste
- Fresh basil for garnish
Directions
- In a bowl, mix together the ground beef, breadcrumbs, Parmesan cheese, egg, garlic powder, salt, and pepper. Form into small meatballs.
- In a large pot, heat olive oil over medium heat. Add the meatballs and cook until browned on all sides. Remove from pot and set aside.
- In the same pot, add onion, carrots, celery, and garlic. Cook until vegetables are tender.
- Add diced tomatoes and beef broth to the pot. Bring to a simmer.
- Add meatballs back to the pot along with kidney beans and pasta. Cook until pasta is al dente.
- Stir in chopped spinach and season with salt and pepper to taste. Cook for a few more minutes.
- Serve hot with fresh basil for garnish.
