Ingredients

  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 3/4 cup light brown sugar
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1/4 cup milk

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, mix together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves and salt. In a separate bowl, cream together the oil and brown sugar. Beat in the eggs one at a time, then stir in the pumpkin and milk. Gradually stir the wet ingredients into the dry. Pour into the prepared pan.
  3. Bake for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
