Ingredients
- 2 tablespoons of butter
- 1 small onion, diced
- 2 cloves of garlic, minced
- 3 tablespoons of all-purpose flour
- 4 cups of chicken broth
- 1 cup of wild rice
- 2 tablespoons of fresh parsley, chopped
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/2 cup of heavy cream
Directions
- In a large pot over medium heat, melt the butter.
- Add the onion and garlic and sauté for about 5 minutes, until the onion is translucent.
- Stir in the flour and cook for 1 minute.
- Gradually add the chicken broth, stirring constantly to avoid lumps.
- Add the wild rice, parsley, salt and pepper and bring to a boil.
- Reduce the heat to low and simmer for about 45 minutes, or until the wild rice is tender.
- Stir in the heavy cream and cook for another 10 minutes.
- Serve warm.
