Ingredients

  • 2 tablespoons olive oil
  • 1 red onion, cut into wedges
  • 2 red bell peppers, chopped
  • 1 eggplant, cut into cubes
  • 2 zucchinis, cut into cubes
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley

Directions

  1. Preheat oven to 400F/200C.
  2. In a large bowl, combine the olive oil, onion, bell peppers, eggplant, zucchini, garlic, oregano, paprika, cumin, salt, and pepper. Toss until evenly coated.
  3. Spread the vegetables onto a baking sheet and bake for 25-30 minutes, or until the vegetables are tender and lightly browned.
  4. Remove from oven and sprinkle with fresh parsley.
  5. Serve and enjoy!
