Ingredients
- 2 tablespoons olive oil
- 1 red onion, cut into wedges
- 2 red bell peppers, chopped
- 1 eggplant, cut into cubes
- 2 zucchinis, cut into cubes
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
Directions
- Preheat oven to 400F/200C.
- In a large bowl, combine the olive oil, onion, bell peppers, eggplant, zucchini, garlic, oregano, paprika, cumin, salt, and pepper. Toss until evenly coated.
- Spread the vegetables onto a baking sheet and bake for 25-30 minutes, or until the vegetables are tender and lightly browned.
- Remove from oven and sprinkle with fresh parsley.
