Ingredients

  • 1 lb ground beef
  • 1/2 cup diced onion
  • 1 (15 oz) can diced tomatoes with green chilies
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can corn, drained
  • 1 (4 oz) can diced green chilies
  • 1 (1.25 oz) package taco seasoning mix
  • 1 cup shredded Cheddar cheese
  • 1/2 cup sour cream
  • 3 cups tortilla chips, crushed

Directions

  1. Preheat oven to 350°F.
  2. In a large skillet over medium-high heat, cook beef and onion until beef is browned and onion is tender.
  3. Drain off any excess fat from skillet.
  4. Stir in tomatoes, black beans, corn, green chilies, and taco seasoning mix.
  5. Bring to a boil, reduce heat, and simmer for 10 minutes.
  6. Transfer mixture to a greased 9x13-inch baking dish.
  7. Sprinkle cheddar cheese over top.
  8. In a medium bowl, combine crushed tortilla chips and sour cream.
  9. Spread over cheese.
  10. Bake for 20 minutes, or until cheese is melted and bubbly.
