Ingredients

  • 2 tablespoons vegetable oil
  • 1 cup cooked white rice
  • 1/2 cup diced onions
  • 1/2 cup diced carrots
  • 1/2 cup diced bell pepper
  • 1/2 cup diced mushrooms
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons soy sauce
  • 4 large eggs

Directions

  1. Heat the oil in a large skillet over medium heat. Add the onions, carrots, bell pepper, and mushrooms, and cook until the vegetables are tender, about 5 minutes.
  2. Add the cooked rice to the skillet and stir to combine. Add the salt, black pepper, and soy sauce, and cook for an additional 2 minutes.
  3. In a separate bowl, lightly beat the eggs. Pour the eggs over the rice and vegetables in the skillet, and cook until the eggs are set, about 3 minutes.
  4. Transfer the omelet to a plate and serve warm.
