Ingredients
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 teaspoon dried oregano

Directions

Add the diced tomatoes, chicken broth, parsley, lemon juice, and sugar and bring to a simmer.
Add the yellowtail fillets to the skillet and simmer for 8-10 minutes, or until the fish is cooked through.
Season with salt and pepper, to taste.
Serve the fish and sauce over cooked rice or noodles.
