Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • 1 (14.5-ounce) can diced tomatoes
  • 1 cup chicken broth
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons sugar
  • 1 pound yellowtail fillets
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion, garlic, and bell pepper and cook for 3-4 minutes, stirring occasionally.
  3. Add the oregano, paprika, and cumin and cook for 1 minute, stirring constantly.
  4. Add the diced tomatoes, chicken broth, parsley, lemon juice, and sugar and bring to a simmer.
  5. Add the yellowtail fillets to the skillet and simmer for 8-10 minutes, or until the fish is cooked through.
  6. Season with salt and pepper, to taste.
  7. Serve the fish and sauce over cooked rice or noodles.
