Ethiopian Firfir with Dried Beef Quanta Firfir

Ingredients

  • 1 pound of dried beef quanta firfir
  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 teaspoons of berbere (Ethiopian spice mix)
  • 1 teaspoon of ground ginger
  • 1 teaspoon of ground turmeric
  • 1 teaspoon of ground cumin
  • 1/2 teaspoon of ground cardamom
  • 1/2 teaspoon of paprika
  • 1/4 teaspoon of ground cloves
  • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon of ground cinnamon
  • 3 cups of water
  • 1-2 hot peppers, chopped
  • salt and pepper to taste

Directions

  1. Add the dried beef quanta firfir to a bowl and cover with water. Let soak for at least 30 minutes.
  2. Heat the olive oil in a large saucepan over medium heat. Add in the chopped onion and garlic and cook until soft and lightly browned, about 3-5 minutes.
  3. Add in the berbere, ginger, turmeric, cumin, cardamom, paprika, cloves, nutmeg, and cinnamon. Stir until combined and cook for an additional 2-3 minutes.
  4. Drain the soaked beef and add to the saucepan. Pour in the 3 cups of water and bring to a boil. Reduce heat to low and simmer for 15-20 minutes, stirring occasionally.
  5. Add in the chopped hot peppers and season with salt and pepper to taste. Simmer for an additional 10 minutes.
  6. Serve hot with a side of cooked vegetables or a salad.
