Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup wild rice
- 3 cups chicken broth
- 1/2 teaspoon dried thyme
- 1/4 teaspoon ground black pepper
- 2 cups cooked chicken, diced
- 1/4 cup chopped fresh parsley
Directions
- In a large saucepan, heat the olive oil over medium heat. Add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 5 minutes.
- Add the wild rice, chicken broth, thyme, and black pepper. Bring to a boil, then reduce the heat and simmer, covered, until the wild rice is tender, about 30 minutes.
- Stir in the cooked chicken and parsley and simmer for a few minutes to heat through.
- Serve hot.
