Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup wild rice
  • 3 cups chicken broth
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground black pepper
  • 2 cups cooked chicken, diced
  • 1/4 cup chopped fresh parsley

Directions

  1. In a large saucepan, heat the olive oil over medium heat. Add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 5 minutes.
  2. Add the wild rice, chicken broth, thyme, and black pepper. Bring to a boil, then reduce the heat and simmer, covered, until the wild rice is tender, about 30 minutes.
  3. Stir in the cooked chicken and parsley and simmer for a few minutes to heat through.
  4. Serve hot.
