In a large saucepan, heat the olive oil over medium heat. Add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 5 minutes.
Add the wild rice, chicken broth, thyme, and black pepper. Bring to a boil, then reduce the heat and simmer, covered, until the wild rice is tender, about 30 minutes.
Stir in the cooked chicken and parsley and simmer for a few minutes to heat through.
Serve hot.
