Ingredients

  • 1/2 cup applesauce
  • 1/3 cup coconut sugar
  • 1/4 cup almond butter
  • 1/4 cup plant-based protein powder
  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped apples
  • 1/2 cup shredded carrots
  • 1/2 cup raisins
  • 1/4 cup chopped walnuts

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, mix together applesauce, coconut sugar, almond butter, and protein powder until well blended.
  3. Add the oats, baking powder, cinnamon, and salt, and mix until combined.
  4. Stir in the apples, carrots, raisins, and walnuts.
  5. Grease a muffin tin with cooking spray or line with paper liners.
  6. Fill each muffin cup about 2/3 full with the batter.
  7. Bake for 15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let cool for 5 minutes before serving.
