Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup brown rice
  • 2 cups water
  • 1 teaspoon salt
  • 1/4 cup freshly chopped parsley

Directions

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the garlic and cook until fragrant, about 1 minute.
  3. Add the brown rice, stirring to coat with the oil.
  4. Pour in the water and add the salt. Bring to a boil.
  5. Reduce the heat to low and cover the pot. Simmer for 20 minutes.
  6. Remove from heat and let stand, covered, for 10 minutes.
  7. Fluff the rice with a fork and stir in the parsley.
