Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/2 pound andouille sausage, diced
  • 1 pound ground turkey
  • 1 (14.5-ounce) can diced tomatoes
  • 2 cups chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons all-purpose flour
  • 1/2 cup long-grain white rice, cooked

Directions

  1. Heat oil in a large pot or Dutch oven over medium heat. Add onion, bell pepper, garlic, thyme, oregano, cayenne pepper, smoked paprika, black pepper, and salt. Cook for 5 minutes, stirring occasionally.
  2. Add andouille sausage and ground turkey. Cook for 8-10 minutes, breaking up the meat with a spoon as it cooks. Drain off any excess fat.
  3. Add diced tomatoes, chicken broth, Worcestershire sauce, and parsley. Bring to a boil, then reduce heat to low and simmer for 15 minutes.
  4. In a small bowl, whisk together flour and 1/4 cup of water. Slowly add to the pot, stirring constantly. Simmer for 5 more minutes.
  5. Serve over cooked white rice, and enjoy!
