Ingredients

  • 1 cup quinoa
  • 1 pound ground turkey
  • 2 tablespoons olive oil

  • 1 can diced tomatoes, drained
  • 2 cups fresh spinach
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Directions

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the ground turkey and cook until browned, breaking it up into small pieces with a spatula.
