This recipe combines the nutty flavor of quinoa with the hearty texture of black beans, all tossed in a zesty lime dressing. Packed with protein and fiber, this salad is perfect for a light lunch or as a side dish for a BBQ.

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper, to taste

Directions
