This refreshing avocado salad topped with succulent orange glazed chicken is a perfect balance of flavors. The creamy avocado, tangy orange glaze, and a hint of wasabi create a unique and delicious combination. It's a healthy, easy-to-make dish that will impress your guests.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons orange juice
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated orange zest
  • 1 teaspoon wasabi paste
  • Salt and pepper to taste
  • 3 cups mixed salad greens
  • 1 ripe avocado, sliced
  • 1 small red onion, thinly sliced
  • 1 orange, peeled and segmented
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon sesame seeds, for garnish

Directions

  1. In a small bowl, whisk together the orange juice, soy sauce, honey, rice vinegar, orange zest, and wasabi paste. Season the chicken breasts with salt and pepper, then brush the glaze over the chicken. Set aside for 10 minutes to marinate.
  2. Heat a grill pan or grill over medium heat. Cook the chicken for 6-8 minutes on each side, or until cooked through. Remove from the heat and let it rest for 5 minutes before slicing.
  3. Meanwhile, prepare the salad. In a large bowl, combine the mixed salad greens, avocado slices, red onion, orange segments, and chopped cilantro. Toss gently to mix.
  4. Divide the salad onto serving plates. Top each plate with sliced chicken breast.
  5. Sprinkle sesame seeds on top for garnish.
  6. Serve immediately and enjoy!
