Ingredients

  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • 1 red bell pepper, diced

  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels
  • 1 cup black beans

Directions

  1. Preheat the oven to 400°F.
