  • 1 package refrigerated whole wheat pie crust

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Heat olive oil in a large skillet over medium heat. Add the onion, carrots, celery, and garlic. Sauté until the vegetables are tender, about 5 minutes.
  3. Add the diced chicken to the skillet and cook until no longer pink, about 8 minutes.
  4. Sprinkle the flour over the chicken and vegetables. Stir to coat everything with flour.
  5. Gradually add the chicken broth to the skillet, stirring constantly. Cook until the mixture thickens.
  6. Stir in peas, corn, milk, thyme, salt, and pepper. Cook for another 2 minutes.
