- 2 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts, diced
- 1/4 cup whole wheat flour
- 2 cups low-sodium chicken broth
- 1 cup frozen peas
- 1 cup frozen corn
- 1/2 cup low-fat milk
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 package refrigerated whole wheat pie crust
Directions
- Preheat the oven to 400°F (200°C).
- Heat olive oil in a large skillet over medium heat. Add the onion, carrots, celery, and garlic. Sauté until the vegetables are tender, about 5 minutes.
- Add the diced chicken to the skillet and cook until no longer pink, about 8 minutes.
- Sprinkle the flour over the chicken and vegetables. Stir to coat everything with flour.
- Gradually add the chicken broth to the skillet, stirring constantly. Cook until the mixture thickens.
- Stir in peas, corn, milk, thyme, salt, and pepper. Cook for another 2 minutes.
- Remove the skillet from heat and let it cool slightly.
- Roll out the pie crust and place one crust in the bottom of a pie dish. Pour the chicken mixture into the pie dish.
- Cover the pie dish with the remaining pie crust. Seal the edges by pressing them together with a fork.
- Cut several slits on the top crust to allow steam to escape.
- Place the pie dish on a baking sheet and bake in the preheated oven for 30 minutes, or until the crust is golden brown and the filling is bubbly.
