In a large bowl, combine ground beef, onion, green pepper, jalapenos, garlic, chili powder, cumin, salt and pepper. Mix until all ingredients are evenly distributed. Form into 6 patties.
Heat a large skillet over medium-high heat. Add patties to skillet and cook for 4-5 minutes per side, or until cooked through. Top each patty with a slice of cheddar cheese and cook for an additional 1-2 minutes until cheese is melted.
Meanwhile, toast buns in a toaster or toaster oven. Spread honey mustard on the inside of each bun. Place patties on the buns, top with desired condiments, and serve.
