Ingredients

  • 2 tablespoons olive oil

  • 1 can (400g) crushed tomatoes

  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 4 slices of halloumi cheese, approximately 1/4 inch thick
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves for garnish

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent and fragrant.
  3. Add the crushed tomatoes, dried oregano, dried basil, salt, and pepper to the skillet. Stir well to combine and let the sauce simmer for about 15 minutes, allowing the flavors to meld together.
  4. While the sauce is simmering, prepare the halloumi cheese. Dip each slice into the all-purpose flour, then into the beaten eggs, and finally coat with breadcrumbs mixed with grated Parmesan cheese.
  5. Heat a separate skillet over medium heat and add a little olive oil. Pan-fry the coated halloumi slices for about 2 minutes on each side, or until they are golden brown and crispy.
  6. Spread a thin layer of the tomato sauce on the bottom of a baking dish. Arrange the pan-fried halloumi slices on top, and pour the remaining sauce over the cheese.
