1 large butternut squash, peeled, seeded and cut into 1/2-inch cubes
2 tablespoons fresh parsley, chopped
Directions
Heat oil in a large skillet over medium heat. Add the onion and sauté for 5 minutes, until softened.
Add the garlic, ginger, cumin, coriander, paprika, turmeric, red pepper flakes, nutmeg, cinnamon, salt and black pepper. Cook for 1 minute, stirring constantly.
Add the tomato sauce, peanut butter, vegetable broth and honey. Stir to combine.
Add the butternut squash and stir to combine. Cover and cook for 15 minutes, stirring occasionally.
Uncover and cook for 5 minutes, stirring occasionally, until the squash is tender.
Stir in the parsley and serve over cooked rice or with a side of cooked vegetables.
