Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon black pepper
  • 1 teaspoon salt
  • 8 cups mixed greens
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup sliced almonds, toasted

Directions

  1. Preheat grill to medium-high heat.
  2. In a small bowl, whisk together the lemon juice, lemon zest, olive oil, minced garlic, black pepper, and salt.
  3. Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Let it marinate in the refrigerator for at least 20 minutes.
  4. Remove the chicken from the marinade and discard the excess marinade.
  5. Grill the chicken breasts for 6-8 minutes per side, or until cooked through.
  6. Remove the chicken from the grill and let it rest for a few minutes. Then, slice it into thin strips.
  7. In a large salad bowl, combine the mixed greens, sliced cucumber, cherry tomatoes, and red onion.
  8. Top the salad with the sliced grilled chicken.
  9. Sprinkle the feta cheese and toasted almonds on top.
  10. Serve the salad with your favorite dressing or a drizzle of olive oil and lemon juice.
