Ingredients

  • 4 (4-ounce) fish fillet (cod, haddock, or other white fish)
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon olive oil
  • 1 cup basil leaves, packed
  • 1/4 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 3 tablespoons toasted pine nuts
  • 1/4 cup extra-virgin olive oil

Directions

  1. Preheat the grill to medium-high heat.
  2. Season the fish fillets with salt and pepper.
  3. Brush the fish with olive oil and place on the preheated grill.
  4. Cook the fish for 5 minutes on each side.
  5. In a food processor or blender, combine the basil leaves, Parmesan cheese, garlic, and toasted pine nuts. Pulse until everything is finely chopped.
