Ingredients
- 1 lb green beans, trimmed
- 4 slices bacon, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
Directions
- Bring a large pot of salted water to a boil. Add the green beans and cook for 2-3 minutes, until they are bright green and crisp-tender. Drain and set aside.
- In a large skillet, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and place it on a paper towel-lined plate to drain excess grease.
- Remove all but 1 tablespoon of bacon grease from the skillet. Add minced garlic to the skillet and saute for 1-2 minutes, until fragrant.
- Add the blanched green beans to the skillet with garlic. Cook for another 3-4 minutes, stirring occasionally, until the beans are heated through and slightly charred in spots.
- Season with salt and pepper to taste. Toss the cooked bacon back into the skillet and stir to combine. Cook for an additional minute to let the flavors meld together.
- Transfer the green bean and bacon saute to a serving dish. Serve hot as a side dish or with rice or pasta as a main course.
