Ingredients

  • 2 cups dried white beans
  • 1 large onion, diced
  • 5 cloves of garlic, minced
  • 1 can diced tomatoes
  • 2 tablespoons tomato paste
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 4 cups vegetable broth
  • 1/4 cup fresh parsley, chopped

Directions

  1. Soak the dried white beans in water overnight. Drain and rinse before using.
  2. Preheat the oven to 350°F (175°C).
  3. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic and sauté until golden brown.
  4. Stir in the tomato paste and cook for an additional 2 minutes.
  5. Add the diced tomatoes, dried oregano, dried thyme, dried rosemary, bay leaf, salt, and pepper. Mix well.
  6. Add the soaked white beans and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 10 minutes.
  7. Transfer the mixture to a baking dish and cover with aluminum foil.
  8. Bake in the preheated oven for 45 minutes to 1 hour, or until the beans are tender.
  9. Remove the foil and bake for an additional 10 minutes to allow the top to brown slightly.
  10. Remove from the oven and let it cool for a few minutes.
  11. Sprinkle fresh parsley over the baked beans before serving.
